Zucchini Peach Bruschetta

INGREDIENTS

    r

  • 1 baguette
  • r

  • 1 cup whipped ricotta cheese
  • r

  • 1 zucchini (thinly sliced)
  • r

  • 2 peaches (sliced)
  • r

  • 3 Tbsp olive oil
  • r

  • 1 lemon (for zest)
  • r

  • rsalt
  • r

  • rpepper
  • r

  • rbasil leaves
  • r

  • rbalsamic glaze
  • r

  • 1/2 cup roasted peanuts
  • r

INSTRUCTIONS

    r

  1. Preheat the oven to 300 degrees then turn it to high broil.
  2. r

  3. Slice the baguette, drizzle the slices with olive oil and place the pieces on a baking sheet. Add salt and pepper to taste. Broil the bread until each piece is crispy and brown.
  4. r

  5. Drizzle olive oil on your peach and zucchini slices before browning them in a pan on the stove.
  6. r

  7. In a bowl, stir together your whipped ricotta cheese, lemon zest, salt and pepper. Smear the ricotta cheese on the bread slices then arrange the grilled peach and zucchini slices on top of the cheese.
  8. r

  9. Garnish with basil leaves before sprinkling roasted peanuts on top. Drizzle balsamic glaze over each piece before serving.
