Meatball Sauce (with a Kick!)

INGREDIENTS

    r

  • 2 Tbsp olive oil
  • r

  • 2 cups diced red onion
  • r

  • 2 cups diced celery
  • r

  • 2 cups diced carrots
  • r

  • 3 diced fire-roasted red peppers
  • r

  • 2 tsp table-cracked pepper
  • r

  • 2 tsp Himalayan pink salt
  • r

  • 1/2 cup Italian seasoning
  • r

  • 1/4 tsp garlic granules
  • r

  • 1 Tbsp crushed red pepper flakes
  • r

  • 1 1/2 cups red wine
  • r

  • 2 No. 6 cans of peeled Roma tomatoes
  • r

INSTRUCTIONS

    r

  1. Sautée the onions, carrots and celery until they are translucent
  2. r

  3. Add diced fire-roasted red peppers, salt, pepper, Italian seasoning, garlic and crushed red pepper flakes then cook the blend for three minutes
  4. r

  5. Add the red wine and both cans of tomatoes (water included). Cover the mixture and let it simmer for 20 to 30 minutes
  6. r

  7. Pour the mixture into a mixing bowl. Using a stick or immersion blender, purée the mixture until it is smooth
  8. r

  9. Add your favorite meats or use the mixture as a stand-alone sauce (Note: the sauce does have a little kick, so you can use more or less crushed red pepper to taste)
  10. r
