Jerk Marinade Ingredients

- 1 jalapeño pepper
- 2 garlic cloves
- 1 Tbsp ginger grated
- 2 green onions
- 1 Tbsp thyme chopped
- 1 Tbsp ground allspice
- 1 tsp cinnamon
- 1 tsp black pepper
- 1 Tbsp brown sugar
- 1 Tbsp oil
- 2 Tbsp white vinegar
- 2 Tbsp soy sauce
- 1/2 orange juice and zest
- 1 lime juice and zest

Skewer Ingredients

- 1 lb shrimp peeled and de-veined
- 1/2 cup jerk marinade
- 2 slices fresh pineapple cut into 1/2 inch cubes

INSTRUCTIONS

- Puree all the marinade ingredients in a food processor
- Marinate the shrimp in the jerk marinade for at least 20 minutes (or overnight)
- Skewer the shrimp and pineapple and grill over medium-high heat until cooked (about 2-3 minutes per side).
