Christmas in the Desert

  • 1 ½ ounce mezcal
  • 1 ounce bottled cranberry juice
  • ½ ounce bottled simple syrup
  • ½ ounce lime juice
  • 1 ½ ounce ginger beer
  • 1 ½ ounce club soda
  • Fresh rosemary sprig (optional)
  • Cocktail ice cubes (see preparation directions)


To make the cocktail ice, pour cranberry juice into ice cube trays and deposit small pieces of fresh rosemary sprigs into each square of the tray. Freeze.

For the drink, combine all of the ingredients (except the club soda and ginger beer) in a shaker tin with ice. Shake to combine before pouring the mixture into a Collins-style glass. Add several cocktail ice cubes to the glass and top with ginger beer followed by club soda. If desired, garnish with a rosemary sprig. Serve.
