Healthy Valentine's Day Truffles

Instructions
  1. Gently melt the coconut oil in a saucepan on medium heat and pour it into a mixing bowl
  2. Add the remaining ingredients and combine them thoroughly
  3. Pour the mixture into a shallow bowl and refrigerate it until it is solid (about 1.5 hours)
  4. Using a small spring-release cookie scoop, scoop out the truffles, one at a time, and place them on a parchment-lined baking sheet. If you would like to add more sweetness, dip the truffles in shredded coconut or chopped nuts
  5. Place the baking sheet back in the refrigerator until the truffles are firmly set (about 30 minutes)
  6. Transfer the truffles into a glass storage container and keep them in the refrigerator
Recipe Notes

While these flavorful treats will stay fresh for at least a month, they probably will not last that long! Note: If you prefer a sweeter chocolate taste, just add more honey. Using organic ingredients assures truffles will be free of unwanted chemical pesticides.
